My late mother used to spend many hours in the kitchen, preparing lavish meals for the family. As the youngest child, I often had to help her with the food preparation. Through the years, I somehow grew to enjoy cooking and thankfully, learnt a few dishes from mom (thanks mom). I had always been enthralled by how she so meticulously prepared the nyonya dishes which we were all so fond of. She did everything with such detail, making sure the resulting taste was always par excellence, everytime, all the time.
Her approach to cooking was honest and straight-forward - it is all about aggaration, she often claimed. When I asked how it would be possible for me to record her recipes for posterity if it was only aggaration, she would say, "cooking is like love, it's a balancing act." She made it all sound so simple. But through practice and plenty of hard work, I dare say I have managed to master the skills to some extent.
